It takes expert diligence and many hours to procure syrup worthy of being called, “ Pure Vermont Maple Syrup.” Vermont Sugar Makers have stringent quality requirements administered by the Vermont Department of Agriculture. Every container sold is require to carry a label showing both the grade of the syrup and the name of the producer. Vermont Fancy is light amber in color, and has a delicate maple bouquet and mild maple flavor. It’s excellent on ice cream and any foods which permit the subtle flavor to be appreciated. Grade A Medium Amber has a medium amber color, and a pronounced maple flavor which makes it popular for the table and all-around user. Grade A Dark Amber has a dark amber appearance, staple for the table. Grade B is the strongest and darkest maple syrup. Some prefer its pronounced maple flavor, which makes it the best grade for cooking.
Vermont Fancy
Very light in color has a mild maple flavor. It usually is made earlier in the season when weather is colder. This is the best grade for maple candy or maple cream.
Grade A Medium Amber
Darker color and has more maple syrup flavor than the light. This is the most popular for table syrup, it usually is made mid season.
Grade A Dark Amber
Very dark with strong maple syrup flavor. It is usually made late in the season.
Grade B
Often called the cooking syrup. This is made late in the season and is very dark with the strongest maple flavor, because of its strong maple flavor it’s best for cooking.
